I say Prince Adam/He-Man, because that's what I grew up with basically. I do love the original mini-comics too, but always treated them as though he had already changed into He-Man outside of the comic panels. I have a great love for all aspects, but I do enjoy the Prince Adam aspect a great deal.
I really like the story line in the first minicomic series where he was only He-Man (part of some sort of tribe of jungle warriors) and his armor given to him by the green sorceress gives his super human strength. I never liked Prince Adam.
Prince Adam, definitely. He-Man alone seems too much like a direct ripoff of Conan otherwise (and I do like Conan, no doubt, just that if I want Conan - I'll go read Conan.)-- I actually prefer to see He-Man less even in Adam's case. I like Adam as a character and I like to see Adam try to solve problems without resorting to becoming He-Man. I've always liked the Masters of the Universe part better than the He-Man bit. The mythos has awesome support characters whom I love dearly. He-Man, for me, should be a weapon of last resort.

She-Ra is like the proclamation of power, as it opposses male dominant law makers.
..as I see it anyways.

I see it as growing up, rather than transforming.
Optimus Prime transforms, as the world and its problems need to aswell.
I prefer the storyline that does not include the Adam/He-Man secret identity. He-Man is He-Man.
With that said, I interpret the Adam/He-Man storyline as Adam is always He-Man and He-Man is always Adam. You can't separate the two, they are just different labels for the same guy.
"I reject your Prince Adam and replace him with the original barbarian from the jungle."
